You'll be fine. The first time I taught (taught, not astissed with even) Ancient Near Eastern Religions, I kept one lesson ahead of the students. Well, I already knew something, but about enough to do, say, a couple general sessions on the topic as a whole, not a whole semester in depth. Just stay a lesson ahead and you'll be fine.
